I have been trying to read this PH balance thing but I am just confused - coffee is acidic why the tannin remover is acidic too? I thought the whole equation is to neutralize. E.g. we are putting alkaline pre-spray as most of the soil we treat them as a little acidic?

I understand your confusion about Tannin and pH
Tannin spotters are pretty old school thinking.
The problem with coffee and other tannin stains are that the dye that is carried in an acid solution and tends to bond with many of todays fibers.
trying to use neutralizing pH on any stain is not the answer.
Oxidizing or reducing the variant dye is the key!

I still turn to citric acid first vs other spotters. If it fails I slowly get more aggressive.

Nothing like tricking your helper to smell a coffee stain remover bottle in the morning. Usually wakes them up real fast!
